Scott Williams makes a fun summer entree.
Scott's Summertime BBQ Salmon
4 (6oz) Salmon fillets
1/2cup pineapple juice
2Tbl Lemon juice
4tea Lemon rind
3tea Chili powder
3/4tea ground Cumin
½ tea cinnamon
2Tbl Coconut sugar
Rinse in cold water and pat dry
Combine in ziplock bag marinate for at least 1 Hr.
Preheat oven 400* or Grill
Discard marinade & place fish in a baking dish
Combine Lemon rind-sugar in a bowl
Rub over fish
Bake or Grill at 400*
12min or until fish can be flaked with a fork
Serve this with a light spring salad!!
