Knox county schools has a new chef, and she's a champion!
Spicy Turkey Lettuce Wraps
1 pound of ground turkey
1 head of broccoli, chopped up into small bite size pieces
1 cup of frozen vanilla yogurt
2/3 cup Ricotta cheese
1 fresh orange
Romaine lettuce leaves
¾ cup Pepita
Salt and pepper to taste
1 to 2 tablespoons Sriracha chili sauce
Preheat oven to 375 degrees. Place the pepitas on a baking sheet , drizzle with olive oil and lightly salt them. Bake for 15 minutes, or until nice and golden. Brown the ground turkey in a large skillet, and salt, pepper, and chili sauce. In a separate medium skillet, heat 1 ½ tablespoons of olive oil. sauté the chopped broccoli in till tender (don't over cook –it will lose its color)
Cut lemon in half. Squeeze the lemon-saving juice only. Take seeds out Place In a blender, adding yogurt, ricotta cheese. Blend well and set aside in the fridge.
