Totality Living Well Summer Peach Basil Salad with Teriyaki Marinated Grilled Pork Tenderloin
PEACH TOMATO SALAD:
1 1/2 pounds of tomatoes (any variety), roughly chopped
4 ripe peaches, sliced into wedges
1/2 cup crumbled feta cheese
1 tablespoon Chia Seeds
Small Basil leaves for garnish
Combine the tomatoes and peaches in a bowl and lightly drizzle with the dressing. Top with the feta cheese and chia seeds. Lightly garnish with fresh basil. Serve chilled.
1/4 cup torn fresh basil leaves
¼ cup red onion, chopped
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 1/2 tablespoon honey
1 teaspoon Dijon mustard
Sea salt and ground white pepper
Combine the basil, onion, olive oil, vinegar, honey and Dijon in a blender until the dressing emulsifies and the basil is pureed. Add a dash of salt and pepper to taste.
