1 pkg. baby spinach
1 honeycrisp apple, cored and chopped
2 stalks celery, sliced
1/2 c. Welch's Cranberry Juice concentrate, undiluted
1/3 c. olive oil
1/2 c. dried cranberries, more or less to taste
In a bowl, whisk together juice concentrate and olive oil. Add celery, apples and cranberries. Stir together to coat everything. Let marinate several hours or overnight. When ready to serve, place baby spinach in a large serving bowl, add the fruit/dressing mixture and toss to combine.
