4 cups kale, ribs removed and chopped

1 cup sliced strawberries

2 Tbsp balsamic vinegar

1 Tbsp extra virgin olive oil

1 oz crumbled feta or blue cheese

2 Tbsp toasted walnuts or almonds


Combine vinegar and olive oil. Thoroughly mix in kale and strawberries. Let set for 20-30 minutes to soften the kale. Sprinkle with nuts and cheese. Makes four servings.
