2 lbs. shredded potatoes

1/2 c. softened butter

1/2 tsp. salt

1/2 tsp. pepper

1/2 c. diced onions

1/2 c. sour cream

1 small can cream of chicken soup or cream of mushroom soup

2 or 3 c. cheddar cheese

Heat oven to 375 degrees.

Gently mix all ingredients and bake in greased 9 x 13 pan for about 45 minutes. Be creative and add meats or other veggies for a twist.
